When the order of tracks in the playlist is set manually (without using any template), there should be (and selected) the Manual Sort entry in the Sort menu, so that you know that some manual sorting has been applied and that you can go back to it if you change the sorting.

Now nothing is selected in the sort menu when the track order has been manually arranged.

You miss understand how it work. Sorting is just the action, it changes the content at once when you select it. It's not an option that can be switched on or off.
P.S. Yes, in v5.40 I've introduced "undo"-action especially for cases like that
