Title: Is there a way to fade out / in a track?

Is there a way to fade out / in a track with a cue file or else and to store that with the track on the drive. Maybe in the track file or outside (like informations are stored in a cue file)?

Yes, one can. There are three ways, from the link above (wiki.hydrogenaud.io)

To make a track slowly (maybe 5-10 seconds from normal volume to zero) quieter at the end. Or slowly louder at the beginning.

I'm not sure, but I think I saw such a cue-file.
